Great Mexican Food from a Greek Restaurant Pegasus Restaurant is owned and managed by John DeLay. Pegasus has been in Castle Rock for the past 18 years and in its current location at 313 Jerry Street since 1999. John bought a small stagnant Greek restaurant (he calls it "a Greek/American dive") on East Colfax in Denver 23 years ago. At the time he bought the original Pegasus, the Greek restaurant had added a couple of Mexican items to their Greek menu. Since John moved Pegasus to Castle Rock in the 1980's, the Mexican entrees have grown in popularity until they represent fully one-half of all the sales for Pegasus. John has been blessed with a number of loyal long-term employees during the years he has been a Castle Rock restauranteur. One of the most popular of the dishes at Pegasus is the Chile Rellenos. Head Chef, Gabriel Torres, one of the four Torres brothers who work at Pegasus,has perfected the art of the Chile Relleno over the 15 years he has been at Pegasus.
