Best Green Chile!!! The Kit Carson has got to be one of my favorite restaurants anywhere. It serves hearty homestyle food in a friendly laid back environment. I have eaten a lot of green chile and they have the best! [04 Mar 2003 22:41:09]

Kit Carson Restaurant We were recently in Cimarron for the Phimont Scout Ranch. We ate dinner and breakfast at the Kit Carson Restaurant. It was really good. I had the Chile Rellenos with green chile and the were the best I've had. My husband had a burrito that had a fried green chile tucked inside. We tried Hecks restaurant in Cimarron too.... trust me. If you're eating in Cimarron, go to Kit Carson. [14 Jul 2003 22:48:41]

A Great Place To Go Before a Long Trek The Kit Carson is good because it offers a Philmont themed place with good food. [09 Aug 2003 21:32:18]

Great New Mexican Food The Kit Carson Inn is a fun restaurant and the New Mexican style food is the best I've tasted and I frequent New Mexico often. I have been going there for years and Sammy the manager always takes care of our staff.
Save your money and visit the Kit Carson Inn. The Stuffy's is their specialty and it does fill you up.
Also the place is filled with interesting photos and an autographed guitar collection. [31 May 2004 14:33:56]

Not bad, considering I have eaten there many times and usually the food is very good. Watch out for the tacos though, because they might float away in the grease at the bottom of the serving dish.
We usually arrive there as the place is just about to close. I find it odd that a restaurant that is attached to a hotel cannot figure out that travelers come in late and stay open accordingly. Usually the salad bar has been put away and we get a lot of disgusted looks when we walk in 5 minutes before closing time. So far they have always served us, but they make it well known that they aren't happy about it.
My husband usually orders the buffalo burger, which is well... a buffalo burger, what can I say. Far better than the McDonalds type of burger, but nothing to write home about. [18 Sep 2004 06:31:01]
