In July, the establishment will celebrate five years at its location in the Linden area. In that period, the space has been enlarged and remodeled. Where once a single table stood, a halfdozen fill the bright, colorful dining area. Orders are placed at a counter, from which the large, clean and well-lighted kitchen is visible. There, Ena — who is Jamaican — cooks and supervises an inexpensive menu mostly devoted to her home island’s fare. Perhaps the Jamaican dish best-known in the United States is jerk-seasoned meat and poultry. Ena’s jerk chicken ($6.50) has the proper complex of jerk fragrances, which emanate as much from aromatic seasonings (allspice, coriander) as from garlic, scallions and the fiery-hot chili peppers of the Caribbean. The peppers give the dish a slow afterburn that, for most people seeking this kind of food, will be a pleasant surprise. Ena’s cooks goat ($7.50) in a yellow curry that’s medium-hot, seasoning the tender meat without overwhelming it. Red snapper is one of the fish available from time to time, cooked in various ways and priced according to market. When it’s prepared escoveitchstyle, it’s succulent: First, it’s gently fried while onions, carrots, aromatics and a touch of hot pepper cook together.
