Chinese Dragon! Absolutely delicious!
Everytime I go to Eagle Pass, I love going to the Chinese Dragon Chinese Restaurant on Bibb where Sal y Vaso used to be a long time ago. I have no idea why that little bar still sticks in my head. Anyway, not to stray too far from the subject, I enjoy their Shrimp Fried Rice with an eggroll that is always plump and full of meat. Many of the eggrolls they serve here in Austin are small, burned and hardly appetizing. I hate those eggrolls. One of the criteria that I use to judge Asian restaurants here in Austin is by the size and taste of their eggrolls. If they're too small or crunchy, I usually get up and leave. NO, just kidding. I am not that rude. More than likely, I will go elsewhere unless they win me over with other dishes. But, usually I'm sold if an Asian restaurant has delicious eggrolls: moist, plump, meaty, and above all, cooked not burned! Oh, and by the way, I am also a big fan of their eggdrop soup. It is always a pleasure to patronize their establishment.
